Ingredients:
4 medium size artichokes
1/2 lemon
2 tablespoons lemon pepper oil or olive oil
1 cup water
Directions:
- Trim stems off artichokes, snip sharp points off leaves, and rub cut surfaces with lemon.
- Fit trivet into a 5-quart or larger pressure cooker and add the water.
- Stand artichokes in pot and drizzle oil over each.
- Close lid and bring pressure to second red ring over high heat. Adjust heat to stabilize pressure at second red ring.
- Cook 10 to 12 minutes depending on size and age of artichokes.
- Remove from heat and let heat subside naturally.
Server either warm or cold.
